Preparation:

  1. We wash the rice groats, as they say, in seven waters.
  2. Boil it until half cooked.
  3. Wash and dry the beef and pork pulp.
  4. We twist the meat pulp through a meat grinder.
  5. Peel and rinse the bulbs. Grind two heads into cubes. You can also pass the onion through a meat grinder.
  6. Add the egg, black pepper and salt, stir.

  7. Add some filtered water to the minced meat, stir. Then the hedgehogs will be more juicy.
  8. We form the hedgehog blanks with wet hands. We make neat round pieces of small size. We put them on a baking sheet. By the way, it is very convenient to shape hedgehogs using an ice cream spoon.
  9. We warm up the oven to a temperature of 200 °.
  10. In the meantime, prepare the sauce for the hedgehogs. Put the soft butter in a frying pan and melt it.
  11. Finely chop the remaining onion and put it in a frying pan.

  12. Peel and rinse the carrot roots.
  13. Grate the carrots.

  14. While stirring, fry the vegetables for 5-6 minutes.

  15. Stir and add a couple of tablespoons of broth.
  16. Now add the tomato paste and stir.

  • 450 g mixed minced meat (beef and pork);
  • 60 g long grain rice;
  • 170 g sour cream;
  • 100 g semi-hard cheese;
  • 1 kg of young potatoes;
  • 1 onion;
  • 1 tbsp. l. tomato paste;
  • 3 cloves of garlic;
  • odorless vegetable oil;
  • salt;
  • ground black pepper;
  • dried parsley and dill.

In a separate container, mix sour cream, tomato paste, chopped or pressed garlic, dried herbs. Season with salt and pepper to taste.

Peel the potatoes, cut them into halves or quarters, depending on the size. Put the root vegetables in a bowl, add a third of the sour cream sauce and stir gently to soak the potatoes well.

Rinse the rice and boil in salted water. Throw in a colander and cool. Finely chop the onion and add to the minced meat together with the rice. Knead everything thoroughly and form small balls. Grease the form with vegetable oil, put half of the potatoes, place hedgehogs on top. Fill the gaps between the meat balls with the remaining potatoes. Pour the sauce over everything.

Chicken hedgehogs in tomato sauce

To make the minced poultry meat juicy and rich in taste, it is better to use a mixed fillet of thighs and breast. The ruddy cheese crust makes the dish especially appetizing.

Ingredients:

  • 700 g chicken fillet;
  • 100 g long grain rice;
  • 1 egg;
  • 1 sweet pepper;
  • 1 onion;
  • 0.5 tbsp. l. flour;
  • 400 g of canned tomatoes in their own juice;
  • dried basil;
  • salt;
  • freshly ground black pepper.

  • 0.3 cups of milk;
  • 0.3 cups of rice;
  • 350 g tomato sauce;
  • 2 tbsp. l. wheat flour;
  • salt;
  • ground black pepper.

Rinse the fish fillet, dry it, mince it with a large wire rack. Rinse the rice, boil in salted water until half cooked, put in a colander and cool. Peel the onion, chop finely and fry in hot butter until transparent.

Pour milk, fried onions and rice into the minced fish, season with salt, sprinkle with freshly ground black pepper to taste. Knead the mass thoroughly, form balls of equal size and roll them in flour. Fry the hedgehogs in the oil left over from the onion sautéing.

  • ½ tbsp. rice;
  • 1 + 1 onion (for hedgehogs and for gravy);

  • 3 tomatoes;
  • 1 medium carrot;

Cooking steps:

  1. Boil the rice until half cooked.

  3. We roll small balls from the minced meat obtained, which should be laid out on the bottom of a thick-walled stewpan or saucepan. The gravy will turn out to be a lot, therefore, whatever the chosen container, its sides should be high.   5. Add salt, dried herbs, spices and sugar to the gravy to your taste. The last ingredient is a must, otherwise our sauce will lose its flavor greatly.
  6. Fill the hedgehogs with sauce, simmer under the lid for up to half an hour.

Required Ingredients:

  • 0.5 kg headlight;
  • 1 carrot;
  • 1 onion;
  • 1 Bulgarian pepper;
  • half of a multicooker measuring cup of rice;
  • 40 ml tomato paste;
  • 2 tbsp. l. flour;
  • 100 g sour cream;
  • salt, spices, herbs.
