How to make meat hedgehogs with needles recipe. How to cook minced hedgehogs. For homemade red gravy you need

Recently I decided to cook meat hedgehogs from minced meat with the addition of rice and sour cream sauce. This is a simple but amazingly tasty dish that is simply impossible to resist. To get the perfect result, I highly recommend buying high-quality fresh meat and preparing the minced meat yourself. No store-bought minced meat can compare in taste to homemade.

If desired, vegetables can be added to the minced meat and raw, then they must also be passed through a meat grinder. But I prefer to pre-fry them in sunflower oil, this makes the hedgehogs even tastier. Below I will tell you in detail how to cook minced hedgehogs with rice, stewed with gravy, so that they turn out juicy and aromatic.

Ingredients for minced meat

  • 300 g pork
  • 300 g beef
  • 100 g rice
  • 1 large onion
  • 1 carrot
  • 2 cloves garlic
  • 1 chicken egg
  • salt to taste
  • 0.5 tsp. seasonings for meat
  • 0.5 tsp. ground black pepper
  • 2 tbsp. l. vegetable oil

Ingredients for gravy

  • 200 ml sour cream
  • 2 tbsp. l. tomato paste
  • 1 tbsp. l. flour
  • 30 g butter
  • 500 ml boiling water
  • salt to taste
  • 0.5 tsp each black pepper and Provençal herbs

Cooking steps

  1. Let's prepare all the necessary ingredients. Wash the rice thoroughly, changing the water several times. Pour it into a saucepan, add plenty of cold water, cover the dish with a lid and let it simmer over low heat. When the water boils, add a little salt. Boil the rice for 7-8 minutes until it is half cooked. Then add water and cool the rice to room temperature.

2. Wash the beef and pork, trim it and cut it into medium-sized pieces. Pass the meat through a meat grinder with a fine grid to obtain a homogeneous minced meat.

3. Peel the onion. Let's cut it into small cubes. Heat sunflower oil in a frying pan and pour chopped onion into it. Stirring, fry it until transparent.

4. Peel the carrots and finely grate them. Add it to the sautéed onions and continue cooking the vegetables together until they become soft. Let the prepared vegetables cool.

5. In a deep bowl, mix half-cooked rice, sautéed vegetables and minced meat.

6. Peel the garlic cloves. Let's pass them through a press and add them to the minced meat. Next, beat in the egg, it will help combine the ingredients so that the hedgehogs keep their shape well. Salt the mixture to taste and add spices for flavor.

7. Mix the minced meat thoroughly, achieving a uniform consistency.

8. You can cook the dish in a wide saucepan or a large deep frying pan. Let's form balls with a diameter of 5 centimeters from the minced meat and place them in a dish for cooking.

9. Bring water to a boil and pour boiling water over our balls so that they are half covered with it. Place the frying pan or saucepan on the fire, cover with a lid and simmer the minced hedgehogs for 30 minutes over low heat.

Preparing the gravy

Melt a piece of butter in a ladle. Add wheat flour and mix thoroughly.

10. Then add sour cream, mix again and boil the sauce for 1 minute, stirring it constantly with a whisk.

As an independent second course, as a side dish for lovers of a varied diet, as well as adult gourmets and little picky eaters, minced hedgehogs with rice are ideal to prepare, both in a frying pan and in the oven.

Master the recipe and serve them for the holiday table or just for dinner, pampering your family!

Some will say that there is nothing original in this dish. But this is absolutely not true! The koloboks are given a special piquancy by raw rice, which swells during heat treatment, for example, in the oven.

When fully cooked, grains of rice stick out from the meat balls - this is how spines appear, just like those of real hedgehogs. What is the secret of cooking a dish in the oven, in a frying pan or in a slow cooker, the main ingredients, gravy options and experiments with the composition in a detailed description of the recipes. March to the kitchen!

The recipe for hedgehogs made from minced meat and rice is simple. The main thing is that it has a mandatory list of products, but no one forbids using your imagination and making additions to suit your taste.

To prepare standard minced hedgehogs with rice, you will need a simple set of products:

  • 500 g minced meat (pork, beef, chicken, a mixture of pork and chicken, a mixture of pork and beef are suitable);
  • long grain rice, ½ cut glass (not boiled, but raw!);
  • several heads of onions;
  • 2-3 cloves of garlic;
  • 2 chicken eggs;
  • salt, a mixture of seasonings and peppers;
  • vegetable oil;
  • flour.

The entire list will become the basis for the most delicious balls.

Preparing the meat base

The better the quality of the base for future hedgehogs is prepared, the tastier the dish will be. All efforts must be devoted to preparing the minced meat. Following the classic recipe, take meat, preferably a tenderloin or sirloin (for chicken, breast), and pass it through a meat grinder. To make the meat component more tender, you should turn it in a meat grinder 2-3 times. The mass should stand for 20-30 minutes.

Don't waste your time: chop the onion and garlic.

How to cook minced hedgehogs with rice? Preparing the meat base for baking in the oven is a separate step.

The semi-finished product for future delicacies is made according to the following algorithm:

  1. on a cutting board, finely chop onions and add them to the meat preparation;
  2. the mass is thoroughly mixed;
  3. garlic is chopped with a knife or passed through a garlic press;
  4. all this is added to the workpiece;
  5. mixed thoroughly;
  6. Before being sent to the batch, chicken eggs are beaten in a separate bowl, only then added to the workpiece;
  7. spices, herbs and salt are added to taste;
  8. rice, washed under running water, is also added to the general mass;
  9. all components are mixed.

Koloboks are formed from a homogeneous mass, which then go into the oven. The blanks should not be made very small, but not very large either - a medium size is optimal. Ideally, the weight of each ball is 50-70 grams. The rounds are rolled in flour and placed on the frying surface of a frying pan or oven, greased with fat or oil. Let it be a baking sheet or a tray from a multicooker - it doesn’t matter.

Adding to the koloboks

No matter how you fry or stew the balls, they will be a little dry without gravy. The ideal option is minced hedgehogs with rice and gravy. There are two types of flavored sauce for the oven: sour cream or with the addition of tomato paste.

Recipe for delicate sour cream sauce, which is prepared from:

  • 200 grams of medium fat dairy product (optimal percentage from 12 to 20);
  • a glass of broth or water;
  • 2-3 heads of onions;
  • salt, spices to taste.

Sour cream is mixed with the broth, finely chopped onion is added to the preparation. Salt and pepper the base.

The sauce is poured over the meat rounds, already laid out on a baking sheet in the oven or fried in a frying pan. The dish should be simmered over low heat for half an hour.

The recipe for tomato sauce differs slightly from its dairy counterpart.

The main components are:

  • 100 – 150 grams of tomato paste;
  • a glass of broth or water;
  • two small carrots;
  • 2-3 onions;
  • salt, sugar, spices.

Tomato paste is combined with broth. Coarsely grated carrots and finely chopped onions are added to the preparation. Everything is thoroughly mixed. Salt, sugar and spices are added to taste. The hedgehogs are poured with the resulting sauce and simmered until cooked in a frying pan or in the oven (30-40 minutes over low heat).

How to prepare dietary hedgehogs from minced meat

For those who have digestive problems, as well as diabetics and children, another recipe for this dish is ideal. Here chicken breast is taken as the basis. Hedgehogs made from minced chicken with rice are no different from the recipe for tasty treats made from pork or beef. For softness and tenderness of the chicken component, you can add butter (20-30 g) to the base.

Fry, stew, bake!

There are just so many options for preparing meat hedgehogs that can be used in culinary practice. A frying pan, a baking sheet from the oven or multicooker, even a glass saucepan with a lid are suitable for bringing the koloboks to full readiness. Fried food is the most delicious, but harmful.

If everything is in order with the digestive system, then the round pieces can be fried in vegetable or olive oil in a frying pan or in the oven until golden brown. Then you should add half a glass of water and simmer under the lid.

Minced hedgehogs with rice in the oven will be soft and tender. The oven tray is greased with fat (butter), the koloboks are laid out, and sour cream or tomato sauce is poured. At a temperature of 180 degrees, the dish is stewed for 35-40 minutes. The result is juicy and aromatic hedgehogs from the oven, covered with rice “needles.”

Minced hedgehogs with rice are even easier to cook in a slow cooker than in the oven. The koloboks and sauce are placed in the bowl. The container is placed in the multicooker and a special program is selected. The finished dish will wait until its finest hour, without burning or drying out.

So, how to deliciously cook minced hedgehogs with rice in the oven, in a frying pan or in a slow cooker?

Take advantage of our useful tips:

  1. It is best to mix the base from fresh meat, not defrosted.
  2. It is important not to overload the ingredients (cereals, onions, eggs), otherwise the mass will fall apart.
  3. Do not make too large balls (for reason, see point 2).
  4. It is better to take long-grain cereals rather than round ones: the needles will be more realistic.
  5. The sauce should not completely cover the meat pieces. The optimal level is up to the middle of the bun.
  6. Do not add white bread to the meat base. Hedgehogs are not cutlets, but a type of meatball. Onions, garlic and cereals are sufficient as auxiliary components.
  7. Meat balls can serve as an independent dish or as an accompaniment to side dishes. An ideal addition to rounds are stewed or boiled vegetables, buckwheat porridge, mashed potatoes, and pasta. But it’s better not to serve rice.
  8. Meat koloboks differ from meatballs in that the rice cereal is not boiled, but raw. It is in this form that it will stick out from the surface of the balls, resembling this prickly animal.
  9. Made from minced chicken or veal, this dish will be an excellent option for feeding your baby meat. It is better to cook by steaming or in the oven.
  10. Flour is used for breading, not breadcrumbs. The latter make the dish tough.
  11. To reduce the calorie content of the dish, you should take lean meat, and use water or vegetable broth instead of meat broth.
  12. Cheese lovers add this grated product to their meat preparations. A piece of cheese in the middle of the ball is a surprise.
  13. Thrifty housewives will enjoy freezing raw koloboks in the freezer. They do not require complete defrosting. Place on a baking sheet, bake for half an hour - the second dish is ready.
  14. Exotic lovers will appreciate basmati rice, brown rice and other varieties of this grain in the dish.

No matter what minced meat the hedgehogs are made from, they will be delicious in any case.

This is a very popular recipe in our latitudes, each housewife has her own, because almost everyone who has children prepares hedgehogs from minced meat and rice. Due to the fact that the dish contains rice, meat, and vegetables, and also because of the ease of preparation, delicious hedgehogs are an ideal dish for children and adults in every family.

After the main recipe with photos you will find several variations. They will come in handy if only because they will help make a familiar dish new. They will also be useful for those who do not like tomato juice. In any case, hedgehogs with rice are always tasty and satisfying.

How to cook minced hedgehogs with rice

The recipe for hedgehogs made from minced meat and rice differs from similar meatballs in only one way - to prepare them, the rice is not boiled first, and therefore, after stewing, the rice funny sticks out of the meatballs, reminiscent of hedgehog spines.

For this dish I used mixed minced meat - pork and chicken 2:1. It is ideal if you prepare the minced meat yourself. This way you will be confident in the quality of the meat, especially if the dish is prepared for children.

Peel the onions and cut into small cubes. Pour 1/2 the amount of vegetable oil according to the recipe into the frying pan (I use refined sunflower oil for frying, odorless), place the onion in it and fry it until transparent. And then add the peeled, coarsely grated carrots and fry together until the carrots are soft.

Place the prepared minced meat, dry uncooked rice, and fried onions and carrots in a wide and deep bowl. Add salt and pepper to taste - it is better to use fresh, only ground salt and pepper, they highlight the taste of the dish more clearly.

Mix all the ingredients of our hedgehogs thoroughly. It’s most convenient to do this with your hands, so you can really feel how well the minced meat is brought to homogeneity. Some people add an egg to the minced meat to help bind the ingredients together, but I don’t use it as the egg white makes the hedgehogs tougher. The minced meat molds perfectly even without adding an egg.

Heat the remaining vegetable oil in a frying pan. With wet hands, form small balls 4-5 cm in diameter and place them in the hot oil. Fry on one side over medium heat for 3-5 minutes.

Turn the future hedgehogs over to the other side and fry for another 3 minutes. We do this so that after stewing, the hedgehogs keep their shape and do not fall apart.

Place the fried hedgehog balls in a thick bottom pan. If your frying pan is wide, you can stew the hedgehogs in it.

Pour tomato juice over the balls and add salt to taste.

After boiling, simmer the dish over very low heat for 40 minutes; the balls will increase in volume due to the fact that the rice absorbs the liquid.

Serve minced hedgehogs with rice in portions, hot with a side dish of fresh or baked vegetables. Top with sour cream or your favorite sauce.

Hedgehogs with rice in the oven in tomato sauce

Here, instead of tomato juice, we will pour a specially prepared sauce over the hedgehogs and simmer them in the oven. Our hedgehogs will be more “adult”, since children can’t eat a lot of spices. But they taste amazing and are very soft.

Ingredients for hedgehogs we will take the same amount of products as in the main recipe.

But let’s prepare the filling differently, for it you need:

  • Tomatoes (canned, mild) – 1 can (0.4 kg);
  • Pepper (sweet, preferably red) – 0.15 kg;
  • Garlic – 2 cloves;
  • Onion – 1 pc. (large);
  • Greens (basil, dill, parsley, cilantro) - 1 bunch, if not, you need to take - 1/4 tsp. each dry seasoning.
  • Oil (olive, unrefined) – 40 g;
  • Broth (vegetable, whichever you like best) – 0.4 l.;
  • Coriander – 1/4 tsp.
  • Salt (at least 0.5 tsp), and black pepper - at your discretion.

Cooking method:

  1. We prepare the hedgehogs themselves as in the main recipe, and then prepare the sauce separately.
  2. And we do it this way: first, fry the garlic in well-heated oil, but not for 1 minute. Then add tomatoes and spices (if they are dry), coriander, salt, pepper, simmer for 5-7 minutes, then rub through a sieve and put back in a hot frying pan, add finely chopped pepper to the mixture and simmer for another 7 minutes. After Add 2 cups of vegetable broth and if the greens are fresh, add them after chopping them.
  3. Now pour our sauce over the hedgehogs so that they are just covered. Place in the oven and simmer over low heat for no more than 40 minutes.

Serve the hedgehogs hot, topped with the remaining gravy or sauce. It will be very tasty and spicy.

Hedgehogs with minced chicken rice and sour cream sauce

Not all kids love tomato paste; many refuse it. For those picky eaters, I suggest preparing tender hedgehogs with minced chicken and sour cream sauce. Minced chicken hedgehogs with sour cream sauce will turn out tender, juicy and incredibly tasty.

  • Onion - half a large one;
  • Salt, spices at your discretion;
  • Butter (butter) – 40 g.

Cooking method:

  1. Chicken fillet needs to be ground into minced meat; if you have ready-made minced meat, you can use it. Add pepper and a couple of spoons of sour cream to the minced meat, and the same amount of softened butter (preferably butter) and leave to stand.
  2. Meanwhile, cook half the onion and carrots in a frying pan. Fry them until golden brown.

Hedgehogs with rice and gravy in a frying pan

If you don’t want to bother too much with preparing the gravy, you can prepare this option; it will make the cooking shorter and require less time and effort.

Ingredients:

For homemade red gravy you need:

  • Tomato juice – 0.4 l;
  • Onion - half if large or 1 medium;
  • Carrots – 1 pc. (small);
  • Bell pepper – 150 g (1 large);

For this recipe we need a deep frying pan with a thick bottom. It is important that our rice urchins do not burn. And we can only cook as many hedgehogs as will fit in it.

Cooking hedgehogs:

  1. First, fry the onion until transparent, then add finely grated carrots to it and also simmer in oil.
  2. Next, in a large bowl, mix the minced chicken, dry rice, frying and 2 tbsp. l softened butter. Salt and pepper the mixture. Let our minced meat stand.
  3. At this time, prepare the dressing in a frying pan. To do this, fry the onion again and add coarsely grated carrots to it. Fry until golden.
  4. Then add very finely chopped bell pepper and spices, salt the mixture. When the mixture begins to boil, reduce the heat slightly to medium.
  5. Next, we roll the meat mixture into hedgehogs and place them in our gravy in a frying pan. Now fry everything in a frying pan. Be careful not to burn the seasoning.
  6. When the hedgehogs are fried on both sides, pour tomato juice into the pan and add spices, again salt to taste. You can put 1-2 tbsp. l. butter or olive oil.
  7. Now close everything with a lid and simmer over low heat for another 30-40 minutes.
  8. Serve the hedgehog balls with gravy and hot.

Hedgehogs with bechamel sauce

If you decide to cook beef hedgehogs, then serve them with bechamel sauce.

This original sauce is very tasty in itself, and our hedgehogs with minced beef rice will acquire an exquisite taste with it. They can also be served at the holiday table.

Children will also like these hedgehogs with sauce if you serve the sauce with meat broth. For adults, I recommend preparing the sauce with mustard.

Ingredients:

  • Minced meat (beef) – 0.5 kg;
  • Rice – 0.15 kg;
  • Oil (vegetable) – 70–80;
  • Sour cream (thick and fatty) – 60 g;
  • Onion (onion) – no more than half a large onion.;
  • Carrots – 1 piece (medium size);
  • Fill:
  • Broth (we have meat, thick) – 0.5 l
  • Spices at your discretion.

For bechamel sauce we need:

  • Milk – 0.4 l (necessarily boiled);
  • Flour – 80 gr.;
  • Butter (butter) – 50 g.
  • Pepper (black, ground) – 0.5 tsp;
  • Walnut (nutmeg) – 1/4 tsp.

Add to the finished sauce as desired:

Cooking method:

  1. Prepare the ground beef and add sour cream and salt to it, let it sit for a little (10 minutes) and add the rest of the ingredients: dry rice, fried onions and carrots. Then we form balls and fry them in refined vegetable oil.
  2. After this, put it in a saucepan with a thick bottom and fill it with meat broth and spices (to your taste, I put bay leaf, celery and a mixture of peppers). Or we prepare a dressing from 0.5 liters of boiled water, butter and olive oil and pork fat (take 3 tablespoons in total) and 1 tsp. salt. We also add spices to the water.
  3. Then, put our hedgehogs in the oven and simmer for 30–40 minutes at 160–180 C. You can also cook over fire, but you need a saucepan with a thick bottom or non-stick coating. The fire here is weak.
  4. When the hedgehogs are ready, remove them from the heat.

Bechamel sauce

  1. Melt the butter in a deep frying pan and remove from heat. Now add flour to it and mix well. Put the milk back on the fire and cook until our sauce begins to thicken, now add the remaining milk and add pepper (ground), salt, nutmeg (grated). Let it boil some more and remove from heat. During cooking, the sauce must be stirred all the time, and it must be cooked only over low heat.
  2. And you need to take the milk already boiled, so it won’t run away.
  3. After removing from the heat, the sauce should be transferred to a dry container and allowed to cool. And only then add your choice of table mustard, tomato paste or meat broth. It is not necessary to bring the sauce to a homogeneous consistency. Let it be with beautiful red or mustard stripes.

When serving the hedgehogs, pour our sauce over them. It will be both beautiful and tasty.

Cooking tips:

  • Always simmer hedgehogs until all the water has evaporated. They will be tight and will not fall apart.
  • Make sure that the moisture evaporates, but the balls or mixture do not burn.
  • If the hedgehogs burn, it means your heat is too high or the bottom of your pan is thin. Place a layer of grated carrots on the bottom of the pan, and place the balls on it, so they don’t burn.
  • Cooked balls with tomato paste or sauce can be served without gravy or sauce, but those with sour cream dressing are always served with herbs or green onions.
  • Pour the dressing so that it covers the hedgehogs by 1 cm. When the rice has absorbed the liquid by half, place a piece of butter on top of each hedgehog. It will be very tasty. Instead of butter, you can put a pile of grated hard cheese, which will then melt and the hedgehogs will turn out even tastier.

Bon appetit!

Minced meat dishes regularly appear in the kitchen: dumplings, cutlets, meatballs, casseroles and other wonderful hearty meat products.

It is not surprising that many housewives love to pamper themselves and their families with minced hedgehogs (balls). Most often, rice is added to them, which makes the dish more filling; in addition, these meat hedgehogs with rice can be eaten without a side dish.

Step one: choosing minced meat

To prepare nourishing, tasty and at the same time healthy products, you need to choose the right ingredients. Culinary experts recommend using exclusively long-grain rice and carefully choosing minced meat.

Make sure that it does not emit strange odors, pay special attention to studying the color. Good minced meat can have a burgundy, red or soft pink hue, depending on what kind of meat is in its composition.

It is best to buy fresh rather than frozen minced meat. Remember it between your fingers, it should be fluffy, but still quite dense. You should not buy crushed, out of shape or stuck together minced meat.

Classic recipe for meat hedgehogs

Traditionally, housewives prepared hedgehogs from beef or combined minced meat and stewed them in a saucepan.

First, you need to rinse the rice well and cook it until half cooked. Drain it in a colander, rinse with cold water and wait for the rice to cool. Meanwhile, combine chopped onion, minced meat and egg in a separate container.

The classic recipe uses only salt and pepper, without additional spices, but you can add to this list according to your taste and discretion. Add all the necessary seasonings and cooled rice.

Mix the substance again so that there are no lumps. Make small balls. Prepare the sauce separately: stir sour cream with tomato, add water, salt and pepper, a small amount of basil will be appropriate.

Place the meat hedgehogs and rice into a saucepan and pour the sauce generously over them. Simmer over moderate heat until the rice is completely cooked. As a rule, this takes no more than 35-40 minutes.

Rice and meat hedgehogs in the oven

Grind the garlic, combine them with minced meat, washed rice and egg. Salt and pepper.

Knead the resulting mass thoroughly with your hands to remove excess air. Some chefs advise beating the minced meat with a special hammer so that the finished products are denser and do not fall apart in the slow cooker. After this, start making small meat balls.

Pour some vegetable oil into the device and turn on the frying mode. Fry them for 3-4 minutes on each side.

Sometimes it is necessary to repeat the procedure several times to achieve readiness. Leave the balls in the slow cooker.

Tomatoes can be ground in a blender. Lightly fry the onions and carrots, then add them to the balls, put the tomatoes there, and add a little water. Close the multicooker, turn on the stew mode and cook delicious meat hedgehogs with rice for 40 minutes.

To vary the recipe for balls, you can use different methods. Some people complement them with a side dish, baking them with potatoes and cheese, buckwheat and other ingredients.

Others add a variety of vegetables, cabbage is especially suitable. Particularly tender hedgehogs are obtained if the minced meat is first minced through a meat grinder twice.

You don’t have to experiment with the composition of the hedgehogs themselves, but change the sauce recipe a little.

Of course, different spice options are always relevant: add a little hop-suneli, oregano, turmeric - and you will be pleasantly surprised by the result.
